Zojuist heb ik mijn winkeltje op dit blog geopend met maar liefst 1 product: melkkefir. Om uit te proberen šŸ™‚

 

Mijn verhaal

Als kind kreeg ik ooit van een vriendinnetje een yoghurtplantje. De uitleg erbij was summier en toen ik ermee thuis kwam, kreeg ik zoiets te horen als dat het te lastig was en toch altijd mis gaat, zoiets. Ik had het in melk gedaan en op de verwarming gezet volgens de instructies, maar van afdekken had ik nog nooit gehoord en toen ben ik het waarschijnlijk vergeten, dat zou ik nu nog hebben. Dat soort dingen moeten bij mij in het zicht staan, anders gaat het geheid mis… En het ging mis, het ging stinken en werd slijmerig, alles weggegooid, einde experiment. En een ‘zie je wel’ van moeders, zucht, het leek me zo leuk Ć©n lekker, want toen al was ik erg gek op yoghurt.

Een aantal jaar later, kreeg ik eens kefir te drinken uit de winkel, heerlijk vond ik het, dat zachtzure, prikkelende drankje! Echt iets voor mij. Ik had toen nog geen idee dat het yoghurtplantje dat ik als jonger kind had gekregen, hetzelfde was. Daar kwam ik pas een jaar of 4 geleden achter! Waar ik het toen heb gedronken, weet ik niet meer, ik weet nog dat ik er lang naar gezocht heb, maar het nooit meer heb kunnen vinden. Wel was er een tijdje Umer in de supermarkt te vinden, ook heerlijk, vond ik. Helaas was dat er maar vrij kort, het sloeg niet aan in Nederland.

 

Niet verwonderlijk dus dat toen ik hoorde dat kefir ook nog eens super gezond is, dat dat zo’n beetje het eerste was waarnaar ik opzoek ging, toen ik was begonnen te lezen over Weston A. Price. Kefir werd dus mijn eerste gefermenteerde drank.

En kefir is nog steeds de enige gefermenteerde melk die ik regelmatig maak, iedere week, als we nieuwe rauwe melk hebben gehaald, maak ik meteen een paar liter melkkefir.

 

 

Wat is kefir

Overigens verschilt kefir ondanks zijn tweede naam ‘yoghurtplantje’, veel van yoghurt. Het zijn beide weliswaar  gefermenteerde melkproducten, maar kefir, anders dan yoghurt wordt bereid met korrels die een mengeling zijn van samenlevende goede gisten en bacteriĆ«n. De fermentatie vindt plaats op kamertemperatuur en na het fermenteren worden de korrels eruit gezeefd. Yoghurt wordt gemaakt van alleen bepaalde bacteriestammen, andere dan die van kefir en meestal op hogere temperaturen, je hoeft bij yoghurt er ook niets uit te zeven. yoghurt is ook anders van textuur en smaak. Kefir is meer een drank als karnemelk, yoghurt is glad en een beetje stroperig vaak.

Kefir is afkomstig uit de noordelijke Kaukasus en is al honderden jaren oud. Het woord komt van het Turkse keif  wat zoiets als bedwelming of ‘goed gevoel’betekent.

Niet iedereen kan de smaak even goed waarderen, maar kefir is voor veel dingen te gebruiken. Zo verwerk ik het vaak in een smoothie met banaan en dan gaat het bij de meeste hier prima naar binnen.

 

Gezondheid

Melkkefir is een melkzuurferment en bevat derhalve tal van melkzuurbacteriĆ«n (Lactobacillus Caucasus, Leuconostoc en Acetobacter- en Streptococcensoorten) oftewel probiotica. Bovendien bevat kefir een aantal gisten (Saccharomyces-fragilis en Torulopsisstammen) welke vrij snel kunnen gaan domineren, waardoor ze de ziekteverwekkende bacteriĆ«n de baas zullen zijn en elimineren.

Kefir is dus uitermate geschikt om je darmflora te onderhouden of te herstellen en wordt dan ook toegepast bij het GAPS-dieet, mits er geen melkallergie is. Net als met langdurig gefermenteerde yoghurt (minimaal 24 uur), zal er in kefir nog nauwelijks lactose aanwezig zijn.

Peter Bauwens schrijft in zijn boekje Waterkefir, Melkkefir het volgende over de gezondheidsaspecten van kefir:

Kefir bevat volop mineralen en essentiƫle aminozuren. Tryptofaan, een essentieel aminozuur waar kefir rijk aan is, heeft, in combinatie met het overvloedig aanwezige calcium en magnesium, een rustgevende werking op het zenuwstelsel. Verder levert kefir fosfor, dat noodzakelijk is voor een goede voedselopname. Het hoge gehalte aan vitamine B1 en B12 helpt bij huidproblemen, stress en depressie.

Kefir is wel wat agressiever dan yoghurt en daarom wordt aangeraden er rustig aan mee te beginnen en het gebruik langzaam op te bouwen.

 

Gemakkelijk

Kefir is makkelijk te bereiden. Je hebt er geen extra warmte voor nodig, zoals bij yoghurt. Het een tijd vergeten is ook meestal niet zo’n punt, moet je het wel in een gesloten pot houden en niet zoals ik toen ooit open op de verwarming LOL. Het enige wat er kan gebeuren bij te lang fermenteren is dit:

De wei is gaan scheiden en de melkbestanddelen zijn gaan klonteren. Niks mis mee, alleen wat lastiger om de korrels er weer uit te zeven!

Het leuke van kefir is dat het leeft en dus ook groeit. Niet alleen worden de korrels na verloop van tijd groter, het worden er ook meer! Op die manier kun je steeds meer kefir maken, tot je het niet meer op kunt en dan kun je je vrienden er blij meemaken.

 

 

 

 

Goedkoop

Het enige wat je nodig hebt zijn wat spullen die je veelal al in huis hebt: glazen potten, liefst van die inmaakpotten als hierboven, een zeef en natuurlijk melk en de korrels. Omdat de korrels blijven groeien is dat in principe een eenmalige aanschaf, of je moet het net zo bond maken als ik ooit deed šŸ™‚

Het is in ieder geval een stuk goedkoper dan de meeste probiotica drankjes uit de winkel en ook nog eens complexer van aard en heeft dus meer te bieden dan de drankjes uit de supermarkt, die vaak maar een enkele stam bacteriĆ«n bevatten. Bovendien zit er in veel van die drankjes suiker of ander zoetmiddel, heb ik begrepen…

 

Gebruik van melkkefir

Je kunt kefir natuurlijk prima zo drinken. Ik vind het heerlijk bij mijn ontbijt en een uitstekend drankje om mijn dagelijkse portie Cod Liver Oil  mee weg te spoelen. Er zijn echter legio toepassingen te bedenken voor kefir, ik noemde eerder al de smoothie, maar je zou er bijvoorbeeld ook een soort crĆØme fraĆ®che mee kunnen maken, door slagroom te nemen in plaats van melk. Of je maakt een wat dikkere, romige drank door half melk, half room te nemen. Je kunt het dan ook laten uitlekken in een doek en zo een soort roomkaas maken. De wei die dan overblijft kun je ook weer voor van alles gebruiken, bijvoorbeeld als zuur medium om je granen in te weken.

Je kunt ook heerlijke pannenkoeken bakken van in de kefir geweekt meel of zelfs brood en koekjes.

Ook is het nog mogelijk te experimenteren met verschillende soorten melk. Niet alleen koeienmelk, schapenmelk en geitenmelk ed. zijn geschikt. Kefir kan ook prima worden gebruikt om kokosmelk of granen- en notenmelk te fermenteren. Je kunt zelfs melkkefirkorrels gebruiken als waterkefirkorrels. Wel is het slim om voor je met dit soort andere media gaat experimenteren eerst een voorraad korrels over te hebben, ze zullen namelijk niet meer aangroeien in een waterige omgeving. Eenmaal gebruikt in een waterig medium, kun je nog wel weer melk verzuren, maar deze zal dan niet meer de typische kefir smaak en tinteling geven.

  1. klinkt goed, ik heb osteoporose, zou dit dan ook nog goed zijn (ook ondergewicht) het is toch wel duur? sorry heb niet veel te besteden

    • Vind je de kefirkorrels duur in aanschaf of om het steeds te maken? Als je ze eenmaal hebt gekocht, kun je er eindeloos mee door fermenteren. Ze zullen zelfs aangroeien en dus zou je zelfs porties ervan kunnen verkopen om het terug te verdienen. Soms zijn er ook wel mensen die het weggeven, maar die moet je dan wel net toevallig kennen natuurlijk…
      Of het goed is bij osteoporose zou ik je niet durven zeggen. Ik ben geen therapeut, laat staan arts. Er zit calcium in, net als in melk, maar om calcium goed op te kunnen nemen heb je ook vitamine D nodig en ook vitamine A is belangrijk. Je kunt nog zoveel calciumrijke producten consumeren, als je een vitamine D tekort hebt, schiet je er weinig mee op…

      • klopt en dat is zo’n zoektocht….reguliere artsen zeggen: aankomen in gewicht en verder evt calcichew (lees: carbonaat met aspartaam!) met vit. D maar…waar blijft magnesium/sillicium/k2 etc…maar bedankt!

  2. Vind je de korrels in aanschaf duur? vergeet niet dat het eenmalig is. Je koopt ze 1x en als je er goed voor zorgt, krijg je alleen maar meer korrels. Die kun je opeten, weggeven, maar misschien zelfs ook weer verkopen šŸ™‚
    Ik denk dat kefir, vooral als je deze van rauwe melk maakt prima is voor als je osteoporose hebt, maar ik ben natuurlijk geen arts of therapeut! Bij osteoporose moet je vooral ook denken aan voldoende vitamine D en A. Zonder die vitamines komt de calcium uit de melk(kefir) niet waar die wezen moet: in je botten. Even kort gezegd dan. Succes!

  4. Blijven de gezondheidsvoordelen van melkkefir overeind na het verwerken in bijvoorbeeld pannenkoeken of gebak??

    • Een deel niet, enzymen gaan kapot door verhitting, bacteriĆ«n worden gedood. Echter heb je waarschijnlijk wel je meel geweekt in de melkkefir en is daardoor een groot deel van het fytinezuur afgebroken en de granen zijn beter opneembaar.

  5. Ik heb reeds enkele jaren melkkefirbloemetjes en ze groeiden steeds goed aan zodat ik er veel heb kunnen weggeven aan familie en vrienden.

    Sinds een maand of 2 groeien de bloemetjes echter niet meer maar de yoghurt is wel dikker.
    Het vervelende is dat de kleintjes door het vergiet gaan in de yoghurt zodat je ze mee consumeert.
    Dit is niet leuk maar is het eigenlijk slecht?
    De kleur van de kefir is nochtans mooi, dus mijn vraag: waarom groeien ze niet meer.

    • Waarom ze niet meer groeien kan ik je helaas niet zeggen. Soms gebeurt dat en dan na een tijdje gaan ze toch weer aan de gang. Je kunt proberen om ze andere melk te geven, rauwe melk met meer vet, of extra slagroom erbij doen.
      Het is niet erg dat je de mini bloempjes binnenkrijgt, alleen een beetje zonde als je je kefir wilt laten aangroeien.

    • Niet te koop bij Ekoplaza. Je kunt het soms online vinden of via via. Er zijn bijvoorbeeld groepen op Facebook die starters als kefir weggeven.
