Kruiden en Specerijen

Mijn streven is om zoveel mogelijk te koken met grondstoffen die hier uit de buurt komen. Toch heb ik daar wel een aantal uitzonderingen op. Avocado’s bijvoorbeeld en sinaasappelen, of wat dacht je van kokosolie, niet bepaald lokaal te noemen..

Tja, sommige dingen zijn gewoon te belangrijk voor een gezonde maaltijd, de uitzonderingen die de regel bevestigen wellicht.

Veel specerijen zijn daar ook een voorbeeld van, maar tjee, zou jij ze willen missen? Heel veel kruiden en specerijen (wat is eigenlijk het verschil, vraag ik me nu af?) zijn niet alleen gewoon lekker en goede smaakmakers, veel zijn ook nog eens heel gezond!

Sommige van die kruiden, want zo blijf ik ze voor het gemak allemaal maar even noemen, al vermoed ik dat ik het in deze serie posts vooral over specerijen ga hebben, gebruik ik behoorlijk veel.

Als je die dan in van die l*llige zakjes of potjes koopt, dan blijf je ze op je boodschappenlijstje zetten en dat gaat in de papieren lopen.

 

Kopen in Bulk

In de VS kun je allerlei spullen gemakkelijk in bulk kopen, dat is vaak ook een stuk voordeliger. In Nederland is dat vaak wat moeilijker, heb ik gemerkt, vooral als het gaat om biologische producten.

De gekste dingen kwam ik tegen op mijn speurtocht naar bulk producten:

Zakken gepelde noten van 25 kilo, veel te veel als je bedenkt dat je die beter in de koelkast moet bewaren… Dan moet je het al gaan delen met meerdere mensen.

Een bedrijf waar je wel staffel kortingen krijgt maar meer gaat betalen aan verzendkosten naarmate je meer bestelt, echt goedkoper ben je dan nog niet uit alleen met hele lichte produkten misschien zoals thee.

Of wat dacht je van deze! Klinkt prachtig, maar ik ging eens zitten rekenen en op de meeste producten die ik bekeek scheelde het niks of maar een heel klein beetje met wat ik er hier in de plaatselijke natuurwinkel voor betaal…

Nadelen van kopen in Bulk

In bulk kopen heeft ook nadelen, niet alleen kost het je in een keer vaak veel geld, je moet het ook allemaal kwijt kunnen in huis en houd je het wel goed tot het op is? Bovendien heb ik gemerkt dat ik de neiging heb er meer van te gebruiken, want we hebben er toch zoveel van, ik spring er minder zuinig mee om. Herken je dat?

Voor kruiden heb ik er een goede winkel gevonden: Natural Spices, lang niet alles is biologisch wat ze verkopen, maar ze hebben wel bijna alles wat ik nou juist veel gebruik in de biologische variant.

 

Liever niet Gemalen

Ook zijn het allemaal gemalen kruiden, poeders dus, die ze bij Natural Spices verkopen en die gaan een stuk minder lang mee dan wanneer je ze heel koopt en maalt wanneer je ze nodig hebt. Peper bijvoorbeeld koop ik nooit gemalen, de oliën die daarin zitten zijn zo onstabiel, dat ze gauw ranzig zullen worden en dat is uiteraard niet echt bevorderend voor je gezondheid!

Ook gaat de smaak van gemalen kruiden en specerijen sneller achteruit. Bewaar ze in ieder geval op een donkere plek, liefst in donker glas en luchtdicht verpakt en zorg dat je alles binnen een jaar opmaakt.

 

De Kruiden die ik het meest gebruik

Naast zwarte peper, dat ik zowat wel in ieder gerecht gebruik, zijn tijm, kaneel, kurkuma, koriander, kardemom, komijn, gember, paprikapoeder, cayennepeper, chilipeper en oregano.

In een serie blogposts zal ik een aantal kruiden eens onder de loep nemen en vertellen wat er nou zo goed aan is en waar je op moet letten bij aankoop. Te beginnen met kaneel.

  3. In je lijstje van webwinkels waar je goedkoop in bulk verse kruiden en specerijen kunt kopen, schittert door afwezigheid: Pit&Pit (voorheen gekruid.nl). Zij hebben veel biologische producten, goede kwaliteit, niet gemalen, snelle service, etc.

    Wat ook handig is bij gebruik van ongemalen specerijen: spice grinder. Deze vermaalt specerijen tot fijn poeder, fijner dan de vijzel het kan doen. In sommige bereidingen wil je geen stukjes specerij meer aantreffen, dan is poeder subtieler. Online staat veel advies over de beste en meest effectieve specerijen malers.

      Ja, je hebt helemaal gelijk. Pit&Pit krijgt steeds meer biologische kruiden ook en het aanbod is enorm! Een kruidenmolen heb ik eens gekocht, zo’n handmolentje, maar vond het niet zo’n succes. Nu gebruik ik een klein koffiemolentje van Tomado (kost iets van €15,- bij de Blokker) en dat werkt prima of ik gebruik het hakkertje van mijn staafmixer, werkt in principe hetzelfde als het koffiemolentje.
