Komboecha thee, de top 5 gezondheidsvoordelen

Je hebt er vast al eens van gehoord: kombucha, in Nederland ook wel als komboecha geschreven.

Een gefermenteerde drank gemaakt van een zoete zwarte of groene thee met een cultuur die wel iets wegheeft van een zwam.

Deze zogenaamde zwam is eigenlijk een symbiose van melkzuurbacteriën en gisten en wordt in het Engels vaak aangeduid met SCOBY, een acroniem voor Symbiotic Culture Of Bacteria and Yeast. 




Hier thuis drinken we het allemaal regelmatig en is het ook de enige gefermenteerde drank die iedereen lekker vindt.* Gek eigenlijk dat ik er nooit eerder over geschreven heb, want de drank is niet alleen lekker, maar ook nog eens erg gezond! De smaak zou je kunnen omschrijven als het midden tussen een sprankelende appelazijn en champagne, afhankelijk van het soort thee dat gebruikt is en hoelang je de drank hebt laten fermenteren.

De Oorsprong van Komboecha

Over de oorsprong van komboecha gaan allerlei verhalen de ronde en het is dan ook niet duidelijk waar het precies vandaan komt. Wel is zeker dat de drank al duizenden jaren bekend is en dat de oorsprong ergens in het verre oosten ligt: China, Japan en Korea.

Uiteindelijk is het via Rusland en Polen verder Europa in gekomen. In China zou de grootmoeder verantwoordelijk zijn voor de komboecha thee en als een kleindochter ging trouwen en het huis verliet, kreeg ze een zwam mee als huwelijksgift om voor de gezondheid en een lang leven van haar gezin te zorgen.

Een andere legende vertelt dat een Japanse keizer werd genezen, doordat een Koreaanse arts, genaamd Kombu hem deze gefermenteerde thee gaf.


Komb0echathee zit vol met Voedingsstoffen

De verschillende bacteriestammen en gisten in de zogenaamde komboecha zwam zetten de suikers om in een veelvoud aan zuren, enzymen, vitamines uit het B-complex en vitamine C.

Net als in elk ferment zitten er in de drank goede bacteriën, al zijn dat er wel heel wat minder dan in kefir. In het artikel ‘Het belang van een gezonde darmflora‘ kun je lezen waarom deze goede bacteriën zo belangrijk voor je zijn.

Omdat de drank wordt bereid met sterke zwarte of groene thee, zal het uiteindelijke resultaat ook altijd wat cafeïne bevatten. Of de komboechazwam deze cafeïne omzetten is onduidelijk, de meningen daarover zijn verdeeld. Naar mijn idee blijft cafeïne er gewoon inzitten en zou ik het zekere voor het onzekere nemen, mocht je daar niet tegen kunnen en voor een goede cafeïnevrije thee kiezen.

Ook zal er altijd wat suiker in de drank achterblijven, of je moet deze zo ver door laten fermenteren dat het een soort azijn wordt, maar dan is deze niet meer lekker om te drinken.

Mocht je geen suiker mogen, omdat je zoals ik het GAPS-dieet volgt bijvoorbeeld, dan is er ook nog een andere SCOBY, jun genaamd. Deze wordt gevoed met honing en dat is wel toegestaan bij het GAPS-dieet.

Omdat het om een suiker vergisting gaat, zal er ook een beetje alcohol ontstaan. Het alcoholpercentage zal echter altijd heel laag zijn en meestal niet hoger dan 0,5%.

 

Azijnzuur versus Melkzuur

In tegenstelling tot kefir bevat komboecha lang niet altijd veel melkzuurbacteriën en is in die zin dus een minder krachtige probiotische drank dan kefir.

Komboecha is meer een azijnzuur gefermenteerde drank en daarom kun je ook zo goed een flink lang door gefermenteerde komboecha thee gebruiken als azijn. De zuren en enzymen die in komboecha zo sterk aanwezig zijn zijn een goede ondersteuning voor de spijsvertering en helpen je voedsel te verteren.


5 Gezondheidsvoordelen op een rij

  1. Komboecha verbetert de spijsvertering De goede bacteriën en gisten in kombucha thee weren de bad guys af. Het schijnt vooral goed tegen Candida te werken. In mijn artikel ‘Het belang van een gezonde darmflora‘ lees je daar meer over. De enzymen in de thee helpen voedsel af te breken en verbeteren op die manier de spijsvertering en de opname van voedingsstoffen.
  2. Komboecha versterkt je immuunsysteem
    Het immuunsysteem wordt versterkt door alle micro-organismen uit de komboecha thee. Zoals ook genoemd in ‘Het belang van een gezonde darmflora‘, wordt ons immuunsysteem voor 70% bepaald door de darmflora. Daarnaast bevat komboecha veel antioxidanten.
  3. Komboecha helpt je lichaam te ontgiften
    De enzymen en organische zuren, vooral gluconzuur, in de komboecha thee helpen je lichaam bij het detoxificatieproces, vooral de lever heeft er veel baat bij.
  4. Komboecha zou helpen bij gewrichtsproblemen als artritis
    Er wordt beweerd dat komboecha veel glucosamine bevat en dat het daarom goed zou zijn voor de gewrichten. Echter volgens deze site bevat komboecha helemaal geen glucosamine… Toch schijnt het wel gunstig te zijn voor de gewrichten, maar het is niet zeker waardoor dat wordt veroorzaakt.
  5. Komboecha is goed voor de huid 
    Komboecha heeft zowel van binnenuit als van buitenaf een gunstige invloed op de huid. Als je het op de huid aanbrengt zal het werken als een samentrekkende tonic tegen een vette huid. Je kunt het ook goed gebruiken om huidschimmels mee te bestrijden.

 

Hoe te gebruiken

Vanwege de ontgiftende werking, raad ik je aan om rustig aan te beginnen met komboecha. Je kunt de drank dan het beste verdund met water drinken en de hoeveelheid langzaam opbouwen. Begin met zo 3x per dag met 20 ml. per keer. Uiteindelijk is een hoeveelheid van zo’n 100 à 300 ml. per dag voldoende voor de gezondheid.

Tijdens ziekten, bestraling, infecties of blootstelling aan toxines kun je deze hoeveelheden tijdelijk verhogen. Als je regelmatig teveel drinkt kan het je bloed verdunnen Dit kun je controleren door even in je vinger te prikken, bloedt het te snel, dan drink je teveel.

De drank is prima geschikt om aan kinderen te geven, natuurlijk wel in verhouding naar hun leeftijd en lichaamsgewicht. Het beste kun je de drank dan verdunnen met water. Het alcoholpercentage van zo’n 0,5% is niet zo’n probleem, maar je moet natuurlijk niet overdrijven.

Zelf aan de Slag?

Het is niet makkelijk om een jun SCOBY te vinden in Nederland en naar het schijnt is het verboden om komboechazwammen te verkopen. Verkopen mag dus niet, maar weggeven wel!

Tegen onkostenvergoeding stuur ik je gratis een komboecha (baby)zwam of een junzwam. 

Wegens andere prioriteiten is het helaas niet meer mogelijk kombucha- of junzwammen te bestellen.

    • @nathalie Helaas, dit was een eenmalige actie. De babyzwammen die ik nu heb laat ik groeien, zodat ik ze over enkele weken in mijn winkel kan opnemen.

    • Wanneer dat precies zal zijn, durf ik nog niet te zeggen. Ze groeien niet zo erg hard en ik wil ze pas verkopen als ze echt een redelijke dikte hebben bereikt. Dat zal nog wel enkele weken duren denk ik.

      • Hierover wil ik graag iets vragen. Ik had eerst een bericht gestuurd via het contactformulier, maar deze geeft geen bevestiging van verzenden.

        Ik begin net met kweken van kombucha en ik heb een vraag over mijn huidige, eerste kweek. Ik ben in afwachting van een SCOBY en zodra dat ik een mooie dikke heb gekweekt, geef ik die aan mijn oma om haar oude kweekhobby weer op te pakken. De kweek ruikt goed, de thee is nog ietwat te zoet maar het gaat de goede kant op.
        Maar de SCOBY wordt maar niet “lekker dik”. Moederzwam zit al bijna twee weken in een pot met toch wel een brede diameter. Kan het zijn dat de diameter te groot is, waardoor de zwam maar dun blijft? Haar “energie” moet zich namelijk over een grotere oppervlakte verspreiden voordat die de dikte in kan gaan. Heeft u tips hoe ik ervoor zorg dat mijn volgende poging leidt tot een dikkere zwam? Verder houd ik goed rekening met de hoeveelheid licht, zuurstof en de temperatuur.

        • Hi Alex,
          Dank voor je vraag! Het kan soms lang duren eer er zich een stevige SCOBY vormt en soms lijkt het wel of het helemaal niet wil lukken. Bij mij gaat het het best in een klein potje met een beetje komboechadrank en een deksel er los op. Als ik deze enkele weken ongemoeid laat staan, groeit er vaak wel een mooie babyzwam op. Het lukt zeker niet altijd. Gelukkig zijn ook dunnen zwammen prima te gebruiken en zullen deze na verloop van tijd vanzelf dikker worden.

        • Mooie scobys krijg je door 1 liter water + 5 zakjes zwarte thee gewoon of biologisch, of 40 gram losse thee,

          50 gram suiker
          25 gram druivensuiker
          30 gram honing
          100 ml rest kombucha toevoegen om het resultaat te vervroegen
          Als de thee lauw is 30 graden dan pas zwam toevoegen

          Niet langer dan 2 weken laten staan
          Deksel los doek er overheen in het donker zetten

          Voor een pot van 2 liter alles verdubbelen

  9. Hoi Iris, mijn kombucha leeft nog steeds, alleen de drank wordt steeds scherper van smaak, is dat puur een kwestie van korter laten staan? of kan er iets anders aan de hand zijn?

    • @marianne bedoel je dat de drank die al klaar is nadat deze langer staat steeds scherper van smaak wordt? Ook als je deze in de koelkast bewaart? Over hoeveel tijd heb je het dan? Hier gaat het altijd best snel op, maar staat in de koelkast toch wel een week of 2 schat ik. Het fermentatie proces gaat ook in de koelkast wel door, zij het een stuk langzamer. Hoe langer je kombucha laat staan (met of zonder zwam), hoe meer azijnachtig deze wordt bedoel je dat met scherp?

      • Hoi Iris, nee dat bedoel ik niet, dat was me al wel duidelijk, ik bedoel als ik na 6 dagen proef is ie al zo scherp dus als ik na een week de drank van de kombucha haal dan is ie al erg scherp. Ik heb nu een babyzwam apart gedaan om te kijken of ie dan niet meer zo scherp is, want ik moest er van hoesten zo scherp in mijn keel was ie.

  10. Hmmm, wat typisch is dat Marianne! Hier duurt het altijd erg lang voordat de ergste zoetigheid eraf is, maar dat kan komen doordat ik 4,5 liter tegelijk maak. Het kan wel 2 weken duren eer mijne klaar is en dan nog is het niet zo scherp dat we ervan moeten hoesten… Bedoel je met scherp dat zure van azijn, als of je azijn drinkt? Dat kan natuurlijk behoorlijk scherp zijn azijn. Misschien moet je eens proberen om meer tegelijk te maken in een grotere pot en minder warm te zetten? Ik weet het eigenlijk niet zo goed… Minder thee of korter laten trekken kun je ook proberen. Ik zou er gewoon even wat experimenten op los laten zeg maar. Laat je me weten hoe het je vergaat?

    Hoe laten jullie de kombuchathee fermenteren? In donker of gewoon bij daglicht. Wie heeft hier ervaring mee. Tot nu toe staan mijn (wek)potten in het donker bij 24 graden. vanwege ruimte gebrek wil ik een nieuwe plaats maken om de thee te laten fermenteren. Ik ben benieuwd naar jullie ervaringen.

      Deze actie was van vorig jaar en ik zit momenteel erg krap in mijn kombucha, omdat ik na een lange pauze deze pas vorige week weer ben gaan opstarten. Als ik weer een voorraadje heb, laat ik je wel weten en krijg je er alsnog 1!

  14. je kan als kweekruimte ook een niet aangesloten koelkast met hier in een peertje (lampje) dat warmte afgeeft. De warmte blijft dan mooi binnen. groetjes Stefan.

    Inmiddels gebruik ik al kefir voor brood en drinken.
    En maar ik gevermateerde smoethie’s graanachtige.
    Als er één baby zwam over is hou ik me graag aanbevolen.

    Merk grote verschillen de kambucha zou één enorme aanwinst zijn.
    Had je berichtje zo I zo gedeelt.

    • Het kan soms een tijd duren eer het echt zuur wordt. Het ligt ook aan de omgevingstemperatuur. Hoe warmer, hoe sneller het zal gaan. Het wordt steeds een beetje zuurder, dus ik zou gewoon nog even geduld hebben en regelmatig even proeven.

  19. Beste Lutgarde, je thee moet minstens 1 maand oud zijn. Mijn thee is door omstandigheden 10 weken oud en ik verzeker u die is pas echt zuur. Ik krijg hem nauwelijks binnen. Dus geduld! groet Stefan.

    • Moeten is misschien een groot woord, het e.e.a. hangt namelijk ook af van de omgevingstemperatuur en hoe krachtig jouw zwam is. Met een babyzwam en 4 liter zoete thee, gaat het vast langer duren dan met een flinke zwam of met minder zoete thee. Gewoon nog een tijd laten staan en regelmatig proeven tot de smaak je bevalt. Langer laten staan kan zeker ook, dan wordt het een soort azijn. Ik koop nooit meer azijn, maar gebruik altijd mijn te zure kombucha of jun daarvoor in de plaats!

  24. Ik gebruik al 6 jaar komboucha en mijn kweek ging steeds 5 jaar probleemloos,
    nu het laatste jaar zakt mijn scoby steeds gelijk naar de bodem. Hoe komt dit
    want volgens mij is de werking ervan dan stuk. Ik ga bij een kennis een nieuwe scoby halen
    doe alles zoals ik veerheen steeds deed. En hup die nieuwe weer gelijk naar de bodem.
    Ik zal deze een paar weken laten staan en maar kijken wat er zal gebeuren maar ik vertrouw het niet heel goed. Weet u wat de reden hiervan kan zijn.

  25. Ik gebruik al 6 jaar komboucha maar het laatste jaar heb ik steeds problemen met de kweek ervan
    ik begrijp niet goed wat ik verkeerd doe. De scoby zakt steeds naar de bodem en krijgt daardoor geen verzuring meer. Dus doet haar werking niet goed. Dan ga ik er een nieuwe halen bij een kennis die mij deze 56 jaar geleden ook heeft gegeven. gelijk dat ik deze nieuwe scoby erin leg zakt die weer naar de bodem. Ik begrijp er niks meer van en er is niets aan de situatie veranderd alleen dat ik biologische thee heb genomen. Zou het dat kunnen zijn dan. Ik zal hem nog eens twee a drie weken laten staan. En dan weer eens testen. Maar misschien weet u het antwoord wel??? Mvg Conny

    • Het is geen probleem als je scoby naar beneden zakt. Er zal vanzelf een nieuwe zwam ontstaan bovenin die je eventueel voor een volgende batch kunt gebruiken in plaats van de oude scoby. Hoe het komt is niet goed te zeggen. Soms komt het door temperatuurverschillen.
