Goed Vies, Het Nieuwe Gezond

Goed Vies Meer dan een half jaar geleden stond er in een blaadje van uitgeverij Scriptum dit boek: Goed Vies, het Nieuwe Gezond. Over Opvoeden, Eten en Gelukkige Kinderen.

Dat trok natuurlijk meteen mijn aandacht, want gezond en vies samen, dat moest haast wel met bacteriën van doen hebben. Bacteriën zijn wel een beetje mijn dingetje geworden. Zowel voor de bereiding van voedsel (fermenteren), als de belangrijke rol die zij vervullen in je darmen.

 

 

The War on…

In mijn blogpost over het belang van een gezonde darmflora kun je er ook al over lezen: We zijn met z’n allen een beetje doorgeslagen sinds Louis Pasteur bewees dat bacteriën de oorzaak zijn van allerlei ellende. Schoon en vooral hygiënisch moet het allemaal zijn.

Er woedt al jaren een ware oorlog tegen dat gespuis. Gelukkig gaan steeds meer mensen inzien dat we te ver zijn doorgeslagen daarin. Alles waar ’te’ voor staat, dat is niet goed, behalve tevreden dan natuurlijk. Té schoon is het dus ook niet. Vies is niet altijd slecht en ongezond, er bestaat zoiets als Goed Vies.

 

Steun je Microbioom

Steeds meer komt het belang van een gezonde darmflora naar voren. Het microbioom in en op je lichaam, dat moet je niet bestrijden, dat moet je steunen, voeden en koesteren. Tenminste, de goede jongens dan. En door de goede te steunen, helpen zij jou weer de kwade jongens in toom te houden. Dan is alles mooi in evenwicht.

 

Goed Vies, Hoe je op Natuurlijke Wijze Gezonde Kinderen Kweekt

Het eerste hoofdstuk van Goed Vies begint met hoe de schrijfster vroeger als studente aan het moestuinieren was en daarbij hulp kreeg van een permaculturist. Permacultuur gaat uit van samenwerking en evenwicht in plaats van bestrijden. Door zoveel mogelijk biodiversiteit in een tuin of landschap te brengen, kun je een ecosysteem creëren dat zichzelf in stand kan houden. Plagen zullen dan niet of nauwelijks meer voorkomen.

De schrijfster zegt vervolgens:

 

Een omgeving die in evenwicht is, is beschermd tegen de moeilijkheden die zij in de natuur ondervindt. Ik had het niet verwacht, maar voor mij als arts resoneerde dit ook. De observaties van de plantenwereld vertaalde ik naar mijn werk met kinderen. Zowel in mijn praktijk als in mijn tuin is de gezondheid van de inwendige omgeving een weerspiegeling van de gezondheid van de uitwendige omgeving. Met andere woorden, de elementen van de natuur bepalen het verschil voor de veerkracht en de gezondheid van een kind. Om deze reden zullen kinderen niet gezond groot worden in een steriele, maar wel in een rijke en gevarieerde omgeving.

 

En daar gaat dit boek, Goed Vies over.

Over hoe je met pure en echte onbewerkte voeding en contact met de natuur, de aarde en diversiteit je (weer) gezonde kinderen kunt krijgen.

 

Geschreven door een Arts (én Ouder), vóór (Aanstaande) Ouders

Goed Vies is en boek geschreven voor (aanstaande) ouders, dat ook zeer de moeite waard is voor iedereen die geen kinderen heeft. Kinderen zijn immers ook mensen!

De schrijfster van Goed Vies, Dr. Maya Shetreat-Klein is kinderneuroloog en moeder. Haar zoon ontwikkelde ernstige astma in zijn eerste levensjaar. Ook zijn ontwikkeling, waaronder zijn spraak leek stil te staan.

Conventionele behandelingen brachten geen verbetering, dus ging ze zelf op onderzoek uit. Zo ontdekte ze dat voeding een sleutelrol vervulde. Door de voeding aan te passen, kreeg ze een gezond en gelukkig kind terug, dat zich vervolgens normaal ontwikkelde.

Op de achterkant van het boek staat:

Ze laat overtuigend zien hoe belangrijk de rol van bacteriën hierbij is: gezondheid begint bij de spijsvertering. Onze bewerkte voeding, onze overdreven aandacht voor hygiëne en het veelvuldige gebruik van antibiotica schaden onze darmen, en daarmee onze gezondheid. Echt eten, gekweekt op een voedingsrijke bodem, en contact met de natuur vormen een natuurlijke remedie tegen de toenemende epidemie aan chronische kinderziekten. Naast talrijke inzichten gebaseerd op wetenschappelijk onderzoek geeft ze een handig voedingsplan om je kind gezond op te laten groeien, dat haalbaar is voor iedere ouder.

 

Weer zo’n Boek dat je Niet Mag Missen!

En echt, zonder gekheid, Goed Vies is wederom zo’n boek dat je gewoon moet lezen, zeker als je kinderen hebt of graag wilt! Je kunt het zo gek niet bedenken of het komt aan bod in dit boek. Alles van (epi)genetica, autisme, ADHD, gluten, GMO, waterfilters, fermentatie, MSG, de brein-darm connectie, rauwe melk, grasgevoerd vlees tot spelen op kunstgras en beton versus gras en aarde.

Als een goede wetenschapper betaamd, netjes onderbouwd met wetenschappelijke studies. En toch ook niet saai, omdat het ook een persoonlijk verhaal is van haar en haar kinderen. 

 

Praktisch en Stimulerend

Goed Vies is ook stimulerend.  Tenminste, ik kreeg ook echt weer zin om weer wat meer aandacht op bepaalde punten in ons voedingspatroon te richten en nieuwe of andere dingen uit te proberen. 

Ook prettig vind ik dat ze niet alleen zegt wát je niet moet doen of juist wel qua voeding en dergelijke, maar ze geeft ook hele praktische tips hoe je dat kunt inpassen en plannen. Zelf is ze een werkende moeder, die het lukt toch dagelijks een verse, zelfbereide maaltijd op tafel te zetten voor haar gezin. 

Op het einde staan ook nog een aantal zeer bruikbare recepten. Je leert  er zelfs hoe je een goede bottenbouillon kunt maken.

 

De Vertaling

Normaliter lees ik dergelijke boeken bijvoorkeur in het Engels – de taal waarin het geschreven is – maar ik moet zeggen dat ik deze keer wel blij was met een vertaling. Dit omdat de vertaalster de moeite heeft genomen steeds de situatie zoals die in de VS is en in het boek wordt beschreven, vergelijkt met de Nederlandse en/of Europese situatie.

Dingen die in Amerika nog heel gewoon zijn, zoals hormonen toedienen aan vee, zijn hier verboden. Als het in Europa of Nederland anders is, dan wordt dat met en voetnoot gemeld, dat is prettig!

Wel ontdekte ik een fout die ik ook zeker aan de uitgever zal doorgeven. In het deel dat beschrijft hoe je granen het beste kunt behandelen om de voedingsstoffen beter opneembaar te maken en anti-nutriënten af te breken staat het volgende:

Een traditionele bereiding is ook goed bij andere granen. Als maïs traditioneel wordt bereid door nixtamalisatie – weken, koken in een alkaline oplossing (zoals limoenwater) en dan ontvellen – wordt het het zeer voedzame masa harina.

Als je een klein beetje weet van zuren en basen, dan weet je dat limoenwater zuur is en niet alkalisch (een base is alkalisch). Het oorspronkelijke Engelse woord was limewater (van limestone), wat dus niet vertaald wordt door limoenwater, maar als kalkwater (calciumhydroxide) dat juist heel erg basisch oftewel alkalisch is…

Het is in Nederland niet makkelijk om aan zuivere, voor consumptie geschikte calciumhydroxide te komen, maar ik heb het in huis en heb ook een keer masa harina gemaakt. Daar ga ik zeker nog eens een blog aan wijden. 

 

Thumbs Up!

Vaak als ik een boek te lezen krijg voor een review, ga ik eerst even op internet zoeken wat anderen over het boek te vertellen hebben. En dan kijk ik vooral graag naar de boeken review afdeling op de Weston A. Price site. En omdat ik dit boek er zo perfect tussen vind passen, had ik het daar wel tussen verwacht.

Gek genoeg was dat niet het geval, maar ik weet 100% zeker dat het bij de “Thumbs up” zou hebben gestaan, als er een review over geschreven was! Zo goed past het boek bij Weston A. Price, de richtlijnen en dus ook mijn manier van eten en gedachten over voeding en gezondheid.

    • Ja Natasja, een citroen smaakt zuur, omdat het sap zuur is, het heeft een lage pH waarde. In dit geval heeft het niets te maken met wat er overblijft na verbranding. In dit geval gaat het puur om de chemie van nixtamalisatie die enkel en alleen kan plaatsvinden met een krachtige alkalische stof met een hoge pH dus.

  2. Ik ga het aanschaffen! Kleine noot doch wel belangrijk : de ingrediënten op verpakkingen van ons voedsel en of het nonGMO en vrij van toegevoegde antibiotica zijn, staan op losse schroeven met verdragen als CETA, Tisa en TTIP. Nederlandse en Europese normen gaan omlaag. Iets om rekening mee te houden. 15-2-17 is overigens de stemming over in Brussel.

    • Ja, daar heb je helaas helemaal gelijk in Dora… Die verdragen zijn vreselijk…! Dat wordt dus nog spannend deze week!
      Goed dat je dit even meldt trouwens!

  3. Na jouw recensie heb ik het aangeschaft. En wat vind ik het jammer dat het niet al jaren eerder is verschenen.
    Ik heb een autistische zoon. En ik herken allerlei symptomen.
    We zijn begonnen met graanproducten weg te laten. Heeft al geleid tot minder jeuk en scheetjes in 5 dagen tijd. koemelkproducten hebben we al eerder vervangen Door geitenmelk producten.
    We hebben wel nog een keer melkkefir op basis van koemelk geprobeerd maar de droge huid en schilferige wenkbrauwen tot gevolg.
    Heb je misschien nog tips om van geitenmelk kefir te maken? Het is me nog niet gelukt. Koop de geitenmelk wel gewoon bij appie.

    • Wat goed zeg, dat je meteen zoveel resultaten boekt! Heb je mijn posts over het GAPS dieet wel eens gelezen hier op het blog? Wellicht brengt je dat nog veel verder met jouw zoontje!

      Ik heb geen ervaring met het maken van melkkefir van geitenmelk. Hoezo mislukt dit? Wat gebeurt er precies mee? Je moet weten dat het resultaat met geitenmelk sowieso dunner is als met koemelk, dus misschien dénk je alleen maar dat het mislukt, maar is het gewoon toch goed gefermenteerd? Kan me namelijk niet voorstellen dat het echt kan mislukken… Succes ermee in ieder geval!

    • Bacteriën zeg maar door gefermenteerd voedsel, contact met de natuur: bodem/aarde, dieren etc. En minder overdreven hygiëne.

      • Ja, die hygiëne. Wij mochten vroeger beslist niets opeten als het op de grond/straat gevallen was. Later zag ik bij kennissen van alles vallen en weer opgepakt worden voor verdere consumpties door jong en oud. Mijn gedachten over die vieze gewoonte werden een keer onderbroken door het besef dat ze gezonder dan ik waren.

        Natuurlijk moet je wel kijken waar het gevallen is, er zijn genoeg plaatsen waarvan het beslist niet meer opgepakt mag worden. Maar ook was er een paar jaar geleden het opmerkelijke nieuwsbericht dat in de jaren 50 de ziekenhuizen schoner waren. Dat kwam doordat er toen beter geschobt werd. Met het opdoeken van de huishoudschool is veel kennis over hygiëne en besef van wat schoon is verloren gegaan, al was het begrip schoon natuurlijk wel naar de medische wetenschap van die tijd. Toen deed je nog de hele week met een theedoek. Maar nog steeds schijnen er mensen te zijn die dat doen of met die smerige vaatlap de tafel schoonvegen.

        • Ja, bepaalde dingen blijven natuurlijk noodzakelijk. Als ik op de camping ben bijvoorbeeld, zeker in de zomer als het warm is en er meer mensen zijn, ben ik veel meer alert op handen wassen en dergelijke en wil ik ook niet dat mijn dochter haar beugel even naast de wasbak neerlegt alvorens deze in haar mond te stoppen… Er zijn grenzen zeg maar 🙂

          Over eten dat op de grond is gevallen doe ik vaak niet zo moeilijk, inderdaad wel weer afhankelijk van waar het viel. Daar waar veel honden worden uitgelaten, hmmm liever niet of misschien nog wel erger: daar waar katten komen…

          En ook in de keuken let ik op rauwe kip en schoonmaakdoekjes en gaan die laatste dagelijks in de was.

  5. Wow, wat fijn zulke stappen van verschil! Misschien is het Gut And Psychology Sydroom Dieet iets?probeer het anders met biologische niet gepasteuriseerde geitenmelk of even geen zuivel en wel zelfgemaakte zuivel. Daar zitten minder tot geen suikers meer in afhankelijk van hoelang je het laat staan.

    • Ja, geitenmelk kan inderdaad een verschil zijn! En het is zeker de moeite waard om je eens in het GAPS dieet te verdiepen. dAt gaat nog weer even wat verder dan dit boek, maar dit boek is meer een leefstijlaanpassing en GAPS een tijdelijk protocol.

  7. Ja dat denk ik wel! Ze geeft wel haar zoontje als voorbeeld en dat loopt een beetje als rode draad door het boek, maar wat gezond is en wat niet voor kinderen geldt natuurlijk ook voor ons als volwassenen!
