Achter de Schermen bij la Place

La Place toerIn het verleden, in een tijd dat ik niet zo bewust met voeding bezig was, kwam ik graag bij la Place, gewoon omdat ze er lekkere dingen hadden, het zag er goed uit allemaal, vers en ook niet schreeuwend duur.

Tegenwoordig, omdat ik nu nog maar zelden in de stad kom om te shoppen, maar ook vanwege mijn veranderde manier van eten, kom ik daar eigenlijk ook nooit meer.

Tot ik kortgeleden in Beverwijk over de markt liep met mijn dochter en langs de daar aanwezige la Place kwam. Ze had wel trek en wilde voor een keertje wel eens wat bestellen. Het viel ons meteen op dat ze nu allerlei biologische ingrediënten gebruiken, de zuivel van de shakes bijvoorbeeld, super!

 

Achter de Schermen van la Place

Een paar weken later werd ik gevraagd om eens een kijkje te nemen achter de schermen van la Place. Niet in het restaurant zelf, maar we kregen een rondleiding bij twee belangrijke leveranciers van la Place in Amsterdam: Rondeel eieren en Kwekerij Osdorp.

Rondeel Eieren

Rondeel Amsterdam is de Madurodam versie van de echte Rondeel stallen elders in Nederland, er scharrelen 200 kippen rond in plaats van 300.000…! Het principe is echter hetzelfde.

Rondeel is ontstaan toen er problemen ontstonden bij kippenhouders door de vogelgriep. In samenwerking met de universiteit van Wageningen is er onderzocht wanneer een kip zich op zijn best voelt, wat is het natuurlijke gedrag van zo’n beestje en hoe kun je de meest gunstige omstandigheden creëren. Daaruit werd het idee geboren van een ronde stal, zoals je op de website van Rondeel ook kunt zien. De dieren hebben er ruimte om te scharrelen, ze kunnen stofbaden nemen, hebben een rustig plekje om te leggen en kunnen hoog op stok voor de nacht.

De kippen zijn er heel gemoedelijk, rustig en duidelijk vrij van stress. Ze hebben het er echt naar hun zin, aan dierenwelzijn is zeker gedacht! Echter als je het hebt over het natuurlijke gedrag van de dieren en daar zoveel mogelijk op wil in spelen, dan vraag ik me ook altijd meteen af: krijgen ze dan ook hun natuurlijke dieet??

Het Voer van de Rondeel Kip

Immers, wat een kip eet bepaalt de kwaliteit van het ei. Maar nee, in Nederland en misschien wel in heel Europa is het verboden om kippen dierlijk voer te geven, terwijl kippen toch echte omnivoren zijn, ze eten van nature dus zowel plantaardig alsook dierlijk voedsel! Om het tekort aan eiwitten te compenseren krijgen ze daarom soja…. Ook bij Rondeel zit er soja (en veel maïs) in het voer. Niet erg natuurlijk dus helaas, wel begrijpelijk…

Ondanks dat zijn ze wel aan het experimenteren met het kweken van wormen op afval van voedsel, maar vooralsnog zijn de risico’s daarvan nog te groot. Hier en daar zullen ze evengoed wel een verdwaald beestje van de grond oppikken, maar erg veel in verhouding zal het niet zijn.

Laat je ook niet misleiden door het groen op de foto’s, dat is namelijk kunstgras. Echt gras zou met al die kippen geen lang leven beschoren zijn daar, werd me verteld.

Niet Biologisch, maar….

Rondeel heeft een aantal keuzes gemaakt waardoor zij niet het biologische keurmerk krijgen. Zo is het voer niet biologisch, omdat ze het liever lokaal houden en vaak komt biologisch voer van ver, wat weer niet erg duurzaam is. Zo zijn ook de soja en maïs duurzaam geteeld en niet genetisch gemanipuleerd.

Een andere reden is de vrije uitloopruimte. Biologisch gehouden kippen hebben recht op een x aantal meters buitenruimte, maar uit het onderzoek dat vooraf ging aan het ontwerp van Rondeel is gebleken dat kippen daar amper gebruik van maken, ze zitten liever dichtbij elkaar en zoeken vaak de bescherming van hun hok op.  Ze hebben het er duidelijk naar hun zin, dus wie weet zit daar wel wat in.

Ik heb niet veel verstand van kippen, heb ze helaas zelf niet, maar een vriendin van me wel en eerlijk gezegd verbaasd me dit toch wel enigszins. Bij mijn vriendin scharrelen ze namelijk door de hele tuin. Wellicht dat de beschutting van de struiken die er zijn daartoe bijdragen, die bieden natuurlijk enige bescherming.

Update: Ook uit een reactie van een lezer die zelf ook kippen houdt, blijkt dat kippen wel degelijk graag altijd buiten rondscharrelen, als de omgeving maar niet te kaal is!

Antibiotica wordt niet preventief gegeven, dus dat is ook een pluspunt natuurlijk.

Geen biokeurmerk dus, maar wel 3 Beter Leven sterren, omdat ze het volgens Dierenwelzijn net zo goed hebben als biologische kippen. En ook dragen ze als enige het milieukeurmerk.

Zelf blijf ik toch liever kiezen voor biologische eieren, de kans dat die kippen buiten hier en daar zelf een beestje hebben opgepikt is toch aanmerkelijk groter, lijkt mij.

 

Kwekerij Osdorp

Kwekerij Osdorp was nieuw voor mij en vond ik erg interessant om eens te bezoeken, te meer ik zelf natuurlijk ook graag het een en ander mag kweken, maar dan veel en veel kleinschaliger uiteraard!

Het unieke van deze kwekerij is dat ze tevens een zorginstelling zijn. Ze werken met grote groepen kansarmen uit Amsterdam die iedere dag met busjes worden opgehaald. Onder leiding van 5 werkbegeleiders werken er dagelijks tussen de 40 en 75 daklozen, verslaafden en psychiatrische patiënten in het bedrijf. Daarnaast zijn er een handje vol vaste krachten die deze mensen ook begeleiden.

Ze werken er naar kunnen, krijgen er iedere dag een goede, warme maaltijd en kunnen ook vaak wat gezonde spullen mee naar huis nemen en ze verdienen er natuurlijk ook nog een zakcentje mee. Ze zijn niet verplicht te komen, maar veel komen er graag en liever ook nog eens meer keren per week dan dat de gemeente Amsterdam er subsidie voor geeft.

Naast werk, een goede maaltijd en sociale contacten biedt het bedrijf ook nog eens twee keer per week Nederlandse lessen aan en kunnen sommigen zelfs een MBO opleiding doen (Arbeidsmarktgekwalificeerd assistent).

Opvallend was de rustige, ontspannen sfeer op de kwekerij, je kon goed zien dat de mensen er graag komen om te werken en dat ze het er echt naar hun zin hebben!

Er worden voornamelijk tomaten, paprika’s en aubergines geteeld. In allerlei soorten, maten en kleuren, vele lange rijen vol, een prachtig gezicht!

Neem eens een kijkje op hun Facebookpagina, dat geeft een aardige impressie van hoe het daar er aantoe gaat!

Ook niet Biologisch maar….

Ook deze leverancier van la Place is niet biologisch en de belangrijkste reden daarvoor is dat het verplichte telen in de volle grond (in de kas) daar geen doen is, omdat de grond er niet zo schoon is en er zo vreselijk veel onkruidzaden in de bodem zitten. Ze telen daarom op kokosvezel.

Uiteraard is dat nog altijd niet te vergelijken met producten uit de volle grond. Wat er in de bodem leeft aan micro-organismen en alle mineralen en alle voedingsstoffen die er nog meer inzitten, is een onderwerp waar al heel wat over geschreven is, maar waar eigenlijk nog maar heel weinig van bekend is. Ik kan me niet voorstellen dat een plant die groeit op een substraat waar niets inzit aan organismen, voeding etc. net zoveel voedingsstoffen in zich draagt, als een plant die in de volle grond groeide… En dat in het jaar van de bodem!

Interessant om te lezen hierover is het boek Het bodemvoedselweb.

Wel zijn ze hard op weg om volgens de regels van USDA-organic te werk te gaan. Het enige wat daarvoor nog moet gebeuren is de kunstmest voeding vervangen door natuurlijke voeding. Verder gebruiken ze al alleen biologische bestrijdingsmiddelen en is het een duurzaam werkend bedrijf qua waterwinning en warmte voorziening en dergelijke.

 

La Place Kiest Bewust

Deze twee bedrijven laten dus zien dat biologisch niet altijd zaligmakend hoeft te zijn. Het is ook maar net welke keuzes je wilt maken, wat je belangrijk vindt. Soms gaan biologisch en duurzaam niet samen, soms is lokaal en vers (denk smaak en voedingsstoffen!) belangrijker of je kiest voor sociaal ondernemen bijvoorbeeld.

La Place kiest in ieder geval zijn toeleveranciers zorgvuldig uit. Alle producten van zowel de kwekerij als van Rondeel worden dagelijks vers aangeleverd en dat geldt ook voor de andere verswaren in de restaurants. Een deel is biologisch, zoals de zuivel en ook de ananassen, want die zijn gewoon zoveel lekkerder. Uiteraard speelt ook de prijs een rol, het blijft een bedrijf dat gewoon geld moet verdienen…

Ook aan de afvalberg wordt gedacht. Ze hebben bijna geen waste wat de verswaren betreft en nog niet zo lang geleden zijn ze begonnen met een proef om al het koffiedik (en dat zullen heel wat kilo’s zijn!) op te sparen om daar vervolgens paddestoelen op te laten kweken. Wat een super idee! Ook zijn er pilots in Rotterdam waar ze samenwerken met het Leger des Heils om nog minder etenswaren te hoeven weggooien.

Het is me duidelijk geworden dat ze echt staan voor vers, duurzaam en vol van smaak en daar is wat voor te zeggen! Liefde voor Eten, staat er op hun website en dat straalt ervan af!

Ik ben blij dat ik deze toer heb mogen meemaken en eens wat meer achtergrond heb mogen zien en dat ik dit aan jullie kan doorbrieven. Het is goed om te zien dat er bedrijven zijn die over dit soort dingen nadenken, dat geeft de burger moed!

  1. Ben het helemaal eens met de opmerkingen over de kippen, maar zet daarnaast mijn vraagtekens bij de geweldige zorg voor de “kansarmen”. Ze worden gehaald, krijgen eten en een zakcentje, zelfs wat opleiding. Zou La Place dat betalen, of de gemeente of het rijk? Vrijwel allemaal subsidie!

    Ik ga bij grote bedrijven al lang niet meer uit van dier- en menslievendheid, heb net iets te veel gelezen over subsidiemogelijkheden en wie daar het best gebruik van kunnen maken.

    • Nee, la Place betaalt dat niet en de kwekerij krijgt subsidie per persoon per dag en dan mogen ze daar per persoon 2x in de week komen, meer geld is er niet voor. Een deel betaalt de kwekerij uit eigen zak, waaronder de opleiding. Ze kunnen dit doen o.a. doordat ze op deze manier heel goedkope arbeidskrachten hebben natuurlijk.

      Verder ben ik het ook eens hoor met Jacob zijn opmerking en zelf kies ik ook liever voor biologische eieren, liever nog zou ik ze zelf houden en ze geen voer met soja geven, maar ja je hebt het niet altijd helemaal voor het zeggen hè..!?
